Lemon and Herb Chicken Pasta Salad
A light and zesty pasta salad, perfect for warmer November days and quick family dinners.
Ingredients:
- 500g cooked pasta (penne or bowtie works well)
- 2 cooked chicken breasts, sliced or shredded
- 1 punnet cherry tomatoes, halved
- 1 cucumber, sliced
- 1/4 red onion, finely chopped
- 1/2 cup crumbled feta cheese
- Fresh parsley and basil, chopped
Dressing:
- 1/4 cup olive oil
- Juice of 1 lemon
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- 1 garlic clove, minced
- Salt and pepper, to taste
Instructions:
Garnish with fresh parsley and basil. Serve chilled or at room temperature. Perfect for family meals or lunchboxes!
Prepare the pasta:
Cook the pasta according to package instructions. Drain and let it cool.
Make the dressing:
In a small bowl, whisk together olive oil, lemon juice, honey, Dijon mustard, garlic, salt, and pepper until well combined.
Assemble the salad:
In a large bowl, toss the cooled pasta, sliced chicken, cherry tomatoes, cucumber, red onion, and crumbled feta. Pour the dressing over the salad and toss everything together.
Serve:
Garnish with fresh parsley and basil. Serve chilled or at room temperature. Perfect for family meals or lunchboxes!
