Lemon Poppy Seed Muffins
Ingredients:
- 1 3/4 cups all-purpose flour
- 3/4 cup sugar
- 2 tbsp poppy seeds
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, melted
- 1/2 cup Greek yogurt
- 2 large eggs
- 1/4 cup fresh lemon juice
- Zest of 2 lemons
- 1 tsp vanilla extract
- 1/4 cup milk
Instructions:
Cool and Serve: Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely. These muffins are perfect for a springtime breakfast or snack.al.
Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
Mix the Dry Ingredients: In a large bowl, whisk together the flour, sugar, poppy seeds, baking powder, baking soda, and salt.
Mix the Wet Ingredients: In a separate bowl, whisk together the melted butter, Greek yogurt, eggs, lemon juice, lemon zest, vanilla extract, and milk until smooth.
Combine and Bake: Add the wet ingredients to the dry ingredients and stir until just combined. Divide the batter evenly among the muffin cups. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
