Baked Cheesy Beef & Veggie Pasta Bake

The ultimate comfort dish loaded with hidden veggies, rich flavour, and golden cheesy topping.

Ingredients:

·       1 tbsp olive oil

·       1 onion, diced

·       2 garlic cloves, minced

·       500g beef mince (or plant-based alternative)

·       1 zucchini, grated

·       1 carrot, grated

·       1 cup mushrooms, finely chopped

·       700g jar of passata or tomato pasta sauce

·       1 tsp dried basil or Italian herbs

·       Salt & pepper to taste

·       400g pasta (penne, rigatoni, or spirals work great)

·       1½ cups grated cheese (cheddar or mozzarella)

·       Optional: ¼ cup grated parmesan

 Method:

1.     Preheat oven to 180°C (350°F).

2.     Cook pasta according to packet instructions. Drain and set aside.

3.     In a large pan, heat oil. Sauté onion and garlic until soft.

4.     Add beef mince and cook until browned.

5.     Stir in grated veggies and mushrooms. Cook for 5–7 minutes until soft.

6.     Add pasta sauce, herbs, salt, and pepper. Simmer for 10 minutes.

7.     Stir through the cooked pasta. Pour mixture into a baking dish.

8.     Sprinkle cheese over the top (and parmesan if using).

9.     Bake for 20 minutes or until golden and bubbling.

10.   Serve with a side salad or steamed greens.
