When the days are shorter and the temperature drops, there’s nothing quite like a warm dessert straight from the oven. Rich, comforting and full of nostalgic flavours, Sticky Date Pudding with Butterscotch Sauce is the perfect winter treat to share with family and friends.

Ingredients

Sticky Date Pudding

  • 250g pitted dates, chopped
  • 1 tsp bicarbonate of soda
  • 300ml boiling water
  • 75g butter
  • 150g brown sugar
  • 2 eggs
  • 225g self-raising flour
  • 1 tsp vanilla extract

Butterscotch Sauce

  • 200ml thickened cream
  • 100g brown sugar
  • 80g butter

Method

  1. Place the chopped dates into a bowl, add the bicarbonate of soda and pour over the boiling water. Leave to soak for 10 minutes.
  2. In a separate bowl, cream together the butter and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir through the vanilla extract.
  3. Gently fold in the self-raising flour, followed by the softened date mixture, until well combined.
  4. Pour the batter into a greased baking dish and bake at 180°C for 35–40 minutes, or until cooked through and golden on top.
  5. While the pudding is baking, prepare the butterscotch sauce by placing the cream, brown sugar and butter into a saucepan. Stir over medium heat until the butter has melted and the sauce is smooth and glossy.
  6. Serve the pudding warm, generously topped with butterscotch sauce and accompanied by vanilla ice cream or fresh cream.
