Sweet, juicy watermelon meets creamy feta and fresh mint in this effortlessly refreshing summer salad. Ingredients

  • 4 cups seedless watermelon, cubed
  • 150 g feta cheese, crumbled
  • 1 cup baby rocket or mixed greens
  • ¼ cup fresh mint leaves, torn
  • 2 tbsp extra virgin olive oil
  • Juice of 1 lime (or lemon)
  • Sea salt & cracked black pepper

Optional add-ins:

  • Thinly sliced cucumber
  • Crushed pistachios or almonds
  • A drizzle of balsamic glaze

Method

  1. Place watermelon cubes into a large serving bowl.
  2. Add rocket, mint leaves, and cucumber if using.
  3. Gently scatter feta over the top.
  4. Drizzle with olive oil and lime juice.
  5. Season lightly with salt and cracked pepper.
  6. Toss very gently just before serving to keep the watermelon intact.
