Ingredients
- 4 cups seedless watermelon, cubed
- 150 g feta cheese, crumbled
- 1 cup baby rocket or mixed greens
- ¼ cup fresh mint leaves, torn
- 2 tbsp extra virgin olive oil
- Juice of 1 lime (or lemon)
- Sea salt & cracked black pepper
Optional add-ins:
- Thinly sliced cucumber
- Crushed pistachios or almonds
- A drizzle of balsamic glaze
Method
- Place watermelon cubes into a large serving bowl.
- Add rocket, mint leaves, and cucumber if using.
- Gently scatter feta over the top.
- Drizzle with olive oil and lime juice.
- Season lightly with salt and cracked pepper.
- Toss very gently just before serving to keep the watermelon intact.
