Lemon, Mint & Coconut Quinoa Salad
This dish is cooling, grounding, and vibrant — ideal for warm days when you want something fresh but still deeply nourishing.
Ingredients
- 1 cup quinoa (rinsed well)
- 2 cups water or light vegetable stock
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- ½ red onion, finely sliced
- ¼ cup fresh mint, chopped
- ¼ cup fresh parsley or coriander, chopped
- ½ cup shredded coconut (toasted if you like)
Dressing
- Zest + juice of 1 lemon
- 3 tbsp olive oil
- 1 tsp raw honey or maple syrup
- Sea salt & cracked pepper to taste
Method
- Cook quinoa in water/stock, then cool completely.
- In a large bowl, combine quinoa with cucumber, tomatoes, onion, herbs, and coconut.
- Whisk dressing ingredients together and pour over salad.
- Toss gently, taste, and adjust seasoning.
- Chill for 20 minutes before serving for best flavour.
