Lemon, Mint & Coconut Quinoa Salad

Lemon, Mint & Coconut Quinoa Salad

This dish is cooling, grounding, and vibrant — ideal for warm days when you want something fresh but still deeply nourishing.

Ingredients

  • 1 cup quinoa (rinsed well)
  • 2 cups water or light vegetable stock
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ½ red onion, finely sliced
  • ¼ cup fresh mint, chopped
  • ¼ cup fresh parsley or coriander, chopped
  • ½ cup shredded coconut (toasted if you like)

Dressing

  • Zest + juice of 1 lemon
  • 3 tbsp olive oil
  • 1 tsp raw honey or maple syrup
  • Sea salt & cracked pepper to taste

Method

  1. Cook quinoa in water/stock, then cool completely.
  2. In a large bowl, combine quinoa with cucumber, tomatoes, onion, herbs, and coconut.
  3. Whisk dressing ingredients together and pour over salad.
  4. Toss gently, taste, and adjust seasoning.
  5. Chill for 20 minutes before serving for best flavour.
