This Spring Berry Chia Pudding is everything we love about the season: light, creamy, and bursting with juicy berries. It’s a quick, nourishing breakfast that feels like a little treat — ideal for slow mornings or prepping ahead for the week.
Top it with your favourite mix of berries, a drizzle of honey, or a sprinkle of crunch for extra sunshine in every spoonful
Breakfast: Spring Berry Chia Pudding
Serves: 2 | Prep: 5 min | Chill: 4 hours
Ingredients:
- 4 tbsp chia seeds
- 1 cup almond milk (or preferred milk)
- 1 tsp vanilla extract
- 1 tsp honey or maple syrup
- 1/2 cup fresh berries (strawberries, blueberries, raspberries)
- Optional: toasted coconut or nuts
Instructions:
- Mix chia seeds, milk, vanilla, and honey in a jar or bowl.
- Refrigerate for at least 4 hours or overnight.
- Top with fresh berries and coconut/nuts before serving.
