Ingredients:

- ½ cup roasted sweet potato cubes
- ½ cup steamed broccoli florets
- ¼ avocado, sliced
- 1 small beet, grated
- A handful of sprouts (alfalfa or mung bean)
- A sprinkle of hemp seeds or toasted almonds
Dressing:
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp honey or maple syrup
- 1 tsp Dijon mustard
- Pinch of sea salt
Method:
- Whisk dressing ingredients together in a small bowl.
- Arrange greens in a large bowl, then layer the quinoa, veggies, avocado, beet, and sprouts.
- Drizzle with the dressing and sprinkle with seeds or nuts.
