Spring Renewal Bowl

A healing, high-vibration meal for body and soul.

Ingredients:

  • 1 cup cooked quinoa (or brown rice)
  • 1 cup baby spinach or mixed greens
  • ½ cup roasted sweet potato cubes
  • ½ cup steamed broccoli florets
  • ¼ avocado, sliced
  • 1 small beet, grated
  • A handful of sprouts (alfalfa or mung bean)
  • A sprinkle of hemp seeds or toasted almonds

Dressing:

  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp honey or maple syrup
  • 1 tsp Dijon mustard
  • Pinch of sea salt

Method:

  1. Whisk dressing ingredients together in a small bowl.
  • Arrange greens in a large bowl, then layer the quinoa, veggies, avocado, beet, and sprouts.
  • Drizzle with the dressing and sprinkle with seeds or nuts.
  • Take a deep breath before your first bite infuse your meal with gratitude and love.
